MICROWAVE CARROT BREAD | |
1/2 c. whole wheat flour 1/2 c. all-purpose flour 1/2 c. granulated sugar 1/4 c. brown sugar 1 tsp. baking powder 1 tsp. baking soda 1 tsp. ground cinnamon 3/4 tsp. salt 1 tsp. vanilla 1/2 c. vegetable oil 2 eggs 2 c. grated carrots 1/3 c. raisins Grease bottom of a 9 x 5 inch glass loaf pan. Mix dry ingredients; add remaining. Add grated carrots last. Beat at low speed until blended. Microwave at medium high (70%) 6 minutes. Take out and cover ends with 2 inch wide aluminum foil. Then microwave on medium high 3 to 8 minutes. Test and bake longer, if needed. |
