MICROWAVE BREAD PUDDING 
1/4 c. melted butter
4 slices cubed bread
2/3 c. sugar
1 tsp. grated lemon peel
2 tbsp. lemon juice
1/3 c. raisins
1 c. milk
3 med. eggs
1/4 tsp. cinnamon

Melt butter in a 1 quart casserole dish, 45 seconds to 1 minute on full power. Add bread, sugar, lemon peel, lemon juice and raisins. Combine milk and eggs, pour over the bread mixture. Sprinkle with cinnamon, then place casserole in a baking dish with 1 cup warm water in it. Cook uncovered, 10-12 minutes on full power.

Since microwave ovens vary in power, you may need to adjust your cooking time.
