MICROWAVE OLD - TIME BREAD
PUDDING
 
4 slices toasted bread, buttered
2 eggs, slightly beaten
1/2 c. sugar, divided
1/8 tsp. salt
1 c. evaporated milk
1 c. boiling water
1/2 c. seedless raisins
1 tsp. vanilla
1/2 tsp. cinnamon

Cut the toast into cubes and place in a greased 2 quart baking dish. Combine eggs, 1/4 cup sugar, salt, milk, water, raisins, and vanilla in a glass bowl or 4 cup measure. Microwave at HIGH 1 minute. Pour over the bread cubes. Sprinkle with remaining sugar and cinnamon. Microwave at HIGH 2 minutes. Stir thoroughly. Rotate dish 1/4 turn. Microwave at MEDIUM for 8 to 10 minutes. Let stand on counter to cool.

Since microwave ovens vary in power, you may need to adjust your cooking time.
