MICROWAVE BREAD AND BUTTER PUDDING | |
5-6 slices white and/or brown bread, buttered 1/2 tsp. vanilla 1 1/2 c. milk 4 eggs 5-6 tbsp. sugar Nutmeg Raisins, or candied peel, or crushed pineapple Beat eggs and sugar together. Using a large microwavable dish about 7-8 inches diameter, heat the milk in microwave (say 2 1/2 minutes). Do not boil. Beat egg mixture into the milk. Cut slices of bread to fit into dish and arrange butter side up in layers (2 or 3), sprinkling fruit between layers. Pour egg/milk mixture over bread. Grate nutmeg on top if desired. Leave to stand for 2 minutes to allow bread to soak up the liquid. Cook, uncovered in microwave on defrost for 12 minutes, turning every 3 minutes. Delicious hot or cold, with or without cream or ice cream. |
