WILLIAMSBURG CARROT CAKE 
4 eggs, well beaten
1 1/2 c. vegetable oil
2 tsp. baking powder
2 tsp. cinnamon
3 c. grated carrots
2 c. sugar
2 tsp. baking soda
2 c. flour
1 tsp. salt

Beat eggs, add the other ingredients, except carrots. Mix well, then fold in 3 cups grated carrots. Bake at 350 degrees for 45-50 minutes.

ICING:

1/2 stick butter
8 oz. cream cheese
1/2 tsp. vanilla
16 oz. confectioners sugar

Beat butter and cream cheese, then add other ingredients until creamy. Make sure cake is cool before icing.
