HAM AND CAULIFLOWER HOT DISH 
4 c. cut-up cauliflower and or broccoli
1/4 c. butter
1/3 c. all-purpose flour
1 c. milk
4 oz. sharp American cheese, cubed
1/2 c. sour cream
2 c. cubed fully cooked ham
1 (3 oz.) can sliced mushrooms, drained
1 c. soft bread crumbs
1 tbsp. melted butter

Cook cauliflower and or broccoli in a small amount of salted water, covered, until crisp-tender, drain well. Remove from pan. Stir in flour, add milk all at once; cook and stir mixture until very thick and begins to bubble. Add cheese and sour cream, cook and stir over low heat until cheese is melted. Stir in ham, mushrooms and cooked vegetables.

Turn into a 2-quart casserole. Combine bread crumbs and 1 tablespoon melted butter; sprinkle on top of casserole. Bake uncovered at 350 degrees for 40 minutes. Serves 6.
