SPINACH CHEDDAR RICE 
1 c. uncooked rice
1 c. beef broth
1 c. water
1 med. onion, chopped
1 c. sliced mushrooms
2 cloves garlic, minced
Vegetable spray
1 tbsp. lemon juice
1 bag fresh spinach
1/2 tsp. dried oregano
1 c. cheddar cheese
Pepper to taste

Bring rice, broth and water to boil in medium saucepan. Stir covered, reduce heat and simmer 15 to 20 minutes. Cook onion, mushrooms and garlic in large skillet covered with cooking spray until onion is tender. Stir in lemon juice and oregano. Add spinach, cheese and pepper to rice. Toss lightly until spinach is wilted.
