EGG ROLL (LUMPIA) | |
1 lb. ground pork 2 tsp. shrimp, cooked 1 c. carrots, shredded 1/2 c. onion, finely chopped 1/2 c. ham, cooked and finely chopped 5 tbsp. raisins, finely chopped 2 oz. bean thread noodles 2 eggs, slightly beaten Salt and pepper, to taste 30 to 35 egg roll wrappers, or use rice paper In a large bowl mix all ingredients, except wrappers, and blend thoroughly. Let mixture stand 30 minutes For each egg roll wrapper, spoon on 2 tablespoons of mixture and roll up tightly. Dip end with beaten egg and seal. Deep fat fry until golden brown at 350 degrees. |
