GRANDMA'S RICE CASSEROLE 
1 egg
1 c. grated cheddar cheese
1 (10 oz.) pkg. frozen chopped spinach
2 c. cooked rice
1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. nutmeg
Fresh ground pepper
1/4 c. grated cheddar, save for the top

In a medium bowl beat egg. Add rest and mix. Grease 1 1/2 quart casserole baking dish. Spoon in mix. Smooth top. Sprinkle with cheese. Cover. Bake 30 minutes at 350 degrees. Serves 4 to 6. Microwave: Save sprinkle cheddar. Bake 8 minutes. Stir, rotate and sprinkle. Bake 5 minutes. Super meatless supper dish.

Since microwave ovens vary in power, you may need to adjust your cooking time.
