DUTCH PINEAPPLE PIE 
1 c. sugar
2 tbsp. flour
1/4 tsp. salt
2 eggs beaten
1 tbsp. butter
1 (20 oz.) can crushed pineapple

Mix sugar, flour, eggs and salt. Add pineapple and butter. Cook over low heat until thick. Sprinkle 1/4 of crust mixture over top of pie and bake 25 minutes at 350°F. Serve with whipped cream.

CRUST:

1/2 c. butter, melted
1/2 c. brown sugar
1 c. flour
1/2 tsp. baking soda
1 c. oatmeal
1/2 tsp. vanilla

Blend butter and sugar. Add sifted dry ingredients and mix in oatmeal. Add vanilla to mixture. Press 3/4 of mixture into deep 9-inch pie plate (on bottom and sides).
