3 c. sugar 1/2 c. light corn syrup 1 c. nuts 1/2 c. water 2 egg whites 1 tsp. vanilla Cook sugar, water and syrup over low heat. Stir only until sugar is dissolved. Then cook without stirring until soft ball stage when dropped in cold water. Beat egg whites stiff, add one half cup of hot syrup at soft ball stage, then beat hard while syrup cooks longer. Then add 1/2 cup more syrup and beat. Continue beating while remaining syrup is added. The last syrup should be a hard ball stage. Beat until the candy will not stick to the fingers when touched gently. Add vanilla and nuts, if desired, and drop on greased cookie sheet, or wax paper, working rapidly. |
