HONEY DIVINITY | |
1/4 c. honey 2 1/2 c. sugar 2/3 c. water 1/4 tsp. salt 2 egg whites 1 tsp. vanilla In 2 quart saucepan, combine honey, sugar, water and salt. Stir over low heat until sugar is dissolved. Continue cooking slowly, without stirring, to 265 degrees on candy thermometer (brittle stage). Meanwhile in a large mixing bowl, beat egg whites at high speed until very stiff. Slowly pour over hot syrup, beating constantly at high speed until mixture loses its gloss and a small amount dropped from spoon holds its shape. Add vanilla. Drop by teaspoonfuls onto waxed paper. Makes about 3 1/2 dozen pieces of divine divinity. Honey adds to the keeping quality of divinity. |
