EASY POTATO CASSEROLE 
1 (32 oz.) pkg. frozen hash brown potatoes, thawed
1 med. onion
1/4 bell pepper
1 (10 3/4 oz.) can potato soup, undiluted
1 (10 3/4 oz.) can cream of celery soup, undiluted
1 (8 oz.) carton sour cream
1/2 tsp. salt
1/4 tsp. pepper
1 c. (4 oz.) Monterey Jack cheese, shredded

Combine all ingredients except cheese. Spoon into greased 2 quart dish. Bake 325 degrees for 1 hour and 15 minutes. Sprinkle cheese. Bake 15 minutes more. Serves 8.
