SPANISH RICE 
4 c. rice
1 green pepper, chopped
2 c. chopped onions
2 1/2 tbsp. salt
1 tsp. pepper
2 tbsp. chili powder
8 c. fresh tomatoes, peeled and chopped
3 cloves garlic, chopped
1 tbsp. lemon juice
2 qt. water

Bring water to boil and add rice. Return to boil and cook 5 minutes. Add remaining ingredients and blend well. Bring to a boil again. Pack into hot sterile jars to within 2 inches of the top of the jar. Then fill to within 1/2 inch of the rim with additional boiled water. Put on lids firmly. Process at 10 pounds pressure for 60 minutes.
