CUCUMBER MOLDED SALAD 
Preparation: 30-40 minutes, including chilling. Easy - must do ahead. Serves 4-6 (about 1 quart).

1 pkg. lemon Jello
1 c. boiling water
1 tsp. salt
1 tbsp. vinegar
1 tsp. onion juice
1 c. heavy sour cream
1/4 c. mayonnaise
1 lg. cucumber, finely chopped - shred, drain add juice to water to make 1 c.

Dissolve Jello in boiling water. Mix with salt, vinegar, onion juice. Chill until slightly thick. Fold sour cream and mayonnaise into Jello.

Pat chopped cucumber with paper towel to absorb excess water. Add to above mixture. Place in ring mold and chill until ready to serve. Fill center of mold with shrimp, chicken, lobster, or crab meat salad (or anything you wish). I often fill with tomatoes, sliced.
