OATMEAL CAKE 
1 1/2 c. boiling water
1 c. quick oatmeal
1/2 c. butter
1 c. brown sugar
1 c. white sugar
2 eggs
1 1/2 c. sifted flour
1 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. salt
Raisins, optional

Preheat oven to 350 degrees. Pour boiling water over oatmeal and let stand 20 minutes. Cream butter and both sugars. Add well beaten eggs and oatmeal mixture and blend. Add flour, cinnamon, soda and salt. Bake in 9 x 12 pan for 35 to 45 minutes. This is a very moist cake so test for doneness.

This makes an excellent fruit cake at Christmas. Add candied fruit, 1/2 can of applesauce and nuts to the above ingredients and bake in loaf pans.
