OATMEAL CAKE | |
1 1/2 c. boiling water 1 c. oatmeal 1/2 c. shortening 1 c. white sugar 1 c. brown sugar 2 eggs 1 1/3 c. flour 1 tsp. baking soda 1 tsp. cinnamon 1/4 tsp. salt 1 tsp. vanilla 3/4 c. raisins Put oatmeal in 1 1/2 cups boiling water and let set while you mix up batter. Stir all dry ingredients together. Cream shortening, sugar together and add eggs. Add dry ingredients to oatmeal last. Beat well. Bake 25 to 30 minutes in 350 degree oven. Pour half batter in 9 x 13 pan and sprinkle with 1/2 of raisins. Pour other half batter on this. Sprinkle rest of raisins on batter and bake. Topping: 1 stick butter (melted) 1 c. brown sugar 2 eggs 1 c. chopped nuts 1 c. coconut Beat butter and brown sugar real well. Add eggs, nuts and coconut. Spread on top of cake when it is done. Put back in oven for about 8 minutes. Then put oven on broil and brown to golden brown. |
