STIR AND DROP SUGAR COOKIES 
2 eggs
2/3 c. salad oil
2 tsp. vanilla
1 tsp. grated lemon rind
3/4 c. sugar
2 c. flour
2 tsp. baking powder

Beat eggs with fork, stir in oil, vanilla and lemon rind. Blend in sugar. Add dry ingredients. Roll into one inch balls and place on ungreased baking sheet. Flatten with buttered bottom of glass dipped in sugar (colored sugar for holidays). Bake 8-10 minutes at 400 degrees.

This is the simplest cookie recipe I know, but the results are fantastic.
