BAKED CHICKEN OREGANO 
2 lbs. boned chicken cutlets, sliced thin
Cooking oil
Italian flavored bread crumbs
2 eggs, beaten
1/2 c. lemon juice
1/3 c. oil
3 lg. cloves garlic, minced
1 tsp. parsley
2 tbsp. oregano
Salt & pepper to taste
1/2 c. white wine

Dip chicken in eggs and coat with bread crumbs. Fry in oil until light brown on both sides. Put chicken in baking dish. In separate saucepan mix oil, lemon juice, oregano, garlic, parsley, salt, pepper and wine. Bring sauce to a boil and simmer for 2 minutes. Pour over chciken, cover tightly with foil. Bake at 350 degrees for 40 minutes. Cutlets may be breaded and fried ahead of time and refrigerated until ready to add sauce and to bake.
