FRESH SHRIMP OR SCALLOPS WITH
AVOCADOS
 
1 1/2 to 2 lbs. fresh scallops or medium shrimp
2 sticks butter
6 scallions, chopped
1 1/2 c. champagne
3 med. avocados, slightly firm slices
1 fresh lemon
Parmesan cheese
Salt and pepper
1 1/2 lbs. pasta

Put water on to boil. In large frying pan on medium high heat, melt butter. Saute scallions for 20 seconds. Add champagne; heat to a mild boil. Add seafood; squeeze in juice of 1/2 lemon. Cook for 2 minutes.

Add avocados and toss lightly. Saute 30 seconds; remove from heat and cover. Drop pasta into rapidly boiling water. Drain when cooked. Add pasta to seafood mixture. Add Parmesan cheese, salt, pepper, and lemon juice to taste.
