QUICK AND EASY ENCHILADAS 
1 lb. ground beef
1 med. onion, diced
2 lbs. cheddar cheese, grated
2 sm. cans chili con carne, no beans
12 sm. corn tortillas

Brown ground beef and onion together in skillet. Set aside. Warm tortillas in microwave until soft, about 1 minute. Put small amount of meat and onion mixture on tortilla, roll up and place into baking dish. Do this with all tortillas. Top tortillas with 1/2 of grated cheese. Warm chili con carne in a pan and pour over cheese and tortillas. Top with remaining cheese. Bake at 375 degrees for 30 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
