GREEN AND YELLOW RICE 
3 c. cooked rice: use any kind (1 1/2 c. uncooked rice)
1/4 c. butter
4 eggs, beaten
1 c. milk
1 lb. sharp Cheddar cheese, grated (grate it at home, don't buy already
grated)
1 (10 oz.) pkg. spinach, frozen, chopped, cooked & drained
1 tbsp. onion, chopped
1 tbsp. Worcestershire sauce
1/2 tsp. marjoram
1/2 tsp. thyme
1/2 tsp. rosemary
1/2 tsp. salt

Melt butter and add to rice, unless some was added as with precooked rice. Add milk to eggs then add cheese and spinach. Mix well but gently. Add onion, Worcestershire sauce and seasonings. Add all to rice. Place in 2 quart casserole. May be set aside until ready to cook. When ready, set casserole, uncovered, in pan of warm water. Bake at 350 degrees for 45 minutes. (Supposed to serve 8 but it won't. Your guests will consume quantities.) Serves 6.

This dish is a holiday tradition in my family. I have also taken it to potlucks where it it is always a hit. It can be baked ahead of time and reheated the day of the big meal. My mom would add an extra package of spinach and call it a vegetable dish. It is extra good with fresh rosemary if you can get it.

This is one of my favorite dishes that my mom made when I was a kid. I'm now in my 50s and make it for my family. It's certainly a comfort food and so quick and easy to make.
