GREEN AND YELLOW RICE | |
3 c. cooked rice: use any kind (1 1/2 c. uncooked rice) 1/4 c. butter 4 eggs, beaten 1 c. milk 1 lb. sharp Cheddar cheese, grated (grate it at home, don't buy already grated) 1 (10 oz.) pkg. spinach, frozen, chopped, cooked & drained 1 tbsp. onion, chopped 1 tbsp. Worcestershire sauce 1/2 tsp. marjoram 1/2 tsp. thyme 1/2 tsp. rosemary 1/2 tsp. salt Melt butter and add to rice, unless some was added as with precooked rice. Add milk to eggs then add cheese and spinach. Mix well but gently. Add onion, Worcestershire sauce and seasonings. Add all to rice. Place in 2 quart casserole. May be set aside until ready to cook. When ready, set casserole, uncovered, in pan of warm water. Bake at 350 degrees for 45 minutes. (Supposed to serve 8 but it won't. Your guests will consume quantities.) Serves 6. |
