GRANDMA JOHNSEN'S YELLOW RICE | |
1 c. rice (white) plus 2 1/4 c. water Salt to taste 2 1/2 c. fresh milk 2/3 c. sugar 1 tsp. vanilla 2 eggs Wash rice; put in double boiler with 2 1/4 cups water and salt. let cook, stir occasionally (about 25 minutes). Add sugar and milk; stir well. Let cook about 25 minutes, stirring occasionally (rice mixture will be nice and soft). Remove from heat. In small bowl beat eggs; add vanilla. Take some of the hot rice mixture and stir with the egg mixture. Add to the rest of rice. Pour into a dish. Sprinkle with cinnamon. Serve hot. |
