CHICKEN AND YELLOW RICE 
1 fryer, cut up
1 lg. onion, chopped
2 garlic cloves
2 bay leaves
Saffron (unground)
1 lb. rice
1/2 pt. olive oil
2 pimentos, chopped
1 green pepper, chopped
2 tbsp. salt
16 oz. tomatoes, crush with hands
1 1/2 qt. water
Sm. can Lesuier peas

Fry chicken in oil; DO NOT flour. Fry onions and garlic in same oil. Place chicken, onion, garlic and oil in a large baking pan. Add tomatoes and water.

Boil on top of stove 5 minutes. Add bay leaf, salt, rice, saffron, and green pepper; stir well. Place in 350 degree oven and cook until rice is pretty dry but moist. Garnish with peas and pimento.
