CHICKEN AND YELLOW RICE 
1 fryer
1/2 c. diced onion
1/2 c. diced bell pepper
1 env. yellow rice seasoning
1 c. rice
1 can tomatoes
1/4 c. oil

Wash and prepare fryer (salt and pepper). Do not flour chicken. Lightly brown chicken in hot oil. Saute onions and peppers. Add tomatoes and rice seasoning. Simmer 2 to 3 minutes. Put 1 cup rice in baking dish. Add 2 cups water, salt to taste. Add sauteed onions, peppers and tomatoes. Mix. Place chicken on top of rice mixture. Cover. Bake at 350 degrees for 1 hour.
