LOLA'S SEAFOOD CHOWDER 
1 lb. shrimp, cooked and peeled
1 lb. baby scallops
2 tbsp. chopped garlic
1 chopped green onion
2 (32 oz. ea.) boxes chicken broth (Swanson)
1 cup broccoli florets
2 potatoes, peeled and chopped
1 cup whole kernel corn
1 (12 oz.) can evaporated milk (or 2 depending on desired thickness)
2 tbsp. cornstarch (optional depending on desired thickness)
salt and pepper, to taste

Cook peeled shrimp, scallops, garlic and onion in chicken broth. Once seafood is cooked add in broccoli, potatoes and corn. Let those ingredients simmer until potatoes and broccoli soften. Add evaporated milk, stirring constantly. Add salt and pepper, to taste.

Note: Chowder should be fairly thick but you may add 2 tablespoons of cornstarch until desired thickness is achieved.

Let chowder simmer for about 15 to 20 minutes so flavors can combine.

I made it last night and my family devoured it. Seriously, not even leftovers! The shrimp and scallops were perfect with the veggies, and that little bit of garlic really makes it pop.

I used one can of evaporated milk to start & didn't need the cornstarch at all - it was thick enough for me already (and I like a good creamy chowder!). Next time I might add just a pinch of Old Bay seasoning, but that's personal preference!
