YELLOW RICE AND CHICKEN ARROZ
CON POLLS
 
1 med. size hen, boiled and boned
1 qt. chicken stock
1 pkg. Vigo seasoning
1/2 c. tomato sauce
2 bay leaves
2 pods garlic
1 green pepper
2 med. size onions
1 lb. rice
Salt to taste
Garnish: green peas, pimentos (sliced or chopped)

Place the first five ingredients in a large pot. Brown chopped garlic, green peppers and onions in vegetable oil until tender. Add browned vegetables to pot and then add rice and salt to taste. Boil 5 minutes. Pour into a large pan. Bake at 350 degrees about 20-30 minutes. Cover pan with foil. Heat green peas and pimentos and use as garnish and serve.
