KEY WEST YELLOW RICE 
1 sm. tomato, cut up
1 c. chopped fresh ham
1 clove garlic, crushed
1 sm. onion, chopped
1 bay leaf
Pinch of oregano

Mix olive and cooking oil and saute the above ingredients. Measure 1 cup long grain rice, one envelope of Bigol and salt into 2 cups of water. Add to above mixture and cook covered about 45 minutes or until rice is done and ham is tender.

ALTERNATE METHOD: Boil chicken water until tender. Use 2 cups of chicken broth in place of water. Add chicken to rice while cooking.
