MEXICAN CASSEROLE | |
1 sm. can chopped green chilies (4 oz.) 1 can cream of chicken soup (do not add water) 1 can cream of mushroom soup (do not add water) 1 can enchilada sauce (mild or hot) 1 med. onion, chopped 1-1 1/2 lbs. ground beef 1 pkg. tortillas (corn) 1/2 pkg. Cheddar cheese, grated (4-8 oz.) Saute onions and remove from skillet. Brown ground beef, add green chilies, 2 cans condensed soup (no water), enchilada sauce and onions. Heat until hot. Then layer sauce, then tortillas (tear in small pieces), another layer of sauce and tortillas until use all in a casserole dish. Make sure last layer is sauce. Sprinkle with grated cheese. Bake in 400 degree oven about 20 minutes (until hot and bubbly). |
