QUICK COLD BEET SOUP 
2 cans canned beets with liquid
4 tbsp. sugar
2 c. water
1 tbsp. grated onion
2 tbsp. lemon juice

Mix together and put in blender. Blend until smooth and creamy. Do in batches if necessary. Pour into pitcher and chill. Garnish with a dab of low fat yogurt.
