HOT CROSS BUNS 
1 1/2 c. lukewarm water
4 tbsp. yeast
1 1/2 c. lukewarm milk
2 c. mashed potatoes
1 1/2 c. sugar
4 1/2 tsp. salt
1 1/2 c. butter
6 eggs
3 c. raisins or candied fruit
3 tsp. cinnamon
1/4 tsp. nutmeg
10-12 c. flour

EGG GLAZE:

3 egg yolks
5 tbsp. water

Dissolve yeast in lukewarm water. Add the rest of the ingredients. Let rise. Divide in 4 parts after it rises and shape each part into 20 buns. Let rise. Brush with egg yolk glaze. Bake for 25-30 minutes at 375 degrees. When slightly cool, make a cross of powdered sugar frosting on top. Makes 80 buns.
