HIGHLAND PARK ZUCCHINI MUFFINS 
2 eggs
1/2 c. vegetable oil
1 tbsp. vanilla
2 c. zucchini, shredded
2 c. flour
1/4 c. sugar
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt
1 1/2 tsp. cinnamon
1 c. raisins
1/2 c. chopped pecans (tossed in flour to prevent sticking)

Blend all ingredients together. Bake at 350°Fs for 20 minutes.

Yield: 24 muffins.
