HOT CROSS BUNS 
1 (8 oz.) sweet yeast dough
1 tsp. mixed spice
1 oz. sultanas
1 oz. currants
1 oz. cut mixed peel

Make dough adding fruit and peel after Stage 2, then continue to Stage 6. Divide dough into 8 pieces, shape into buns. Place on greased baking sheet, leave in warm place (10 to 15 minutes) until double in bulk. Make crosses, either by cutting the tops with a knife, or make a smooth paste with flour and water and pipe across each bun. Bake in hot oven (425 to 450 degrees F) for 15 to 20 minutes. Brush with a hot sugar glaze while still warm.
