CHICKEN STIR FRY 
4 lg. boneless chicken breast halves, cut into narrow strips
2 tbsp. vegetable oil
1 sm. onion, chopped
1 sm. green pepper, chopped
1 bunch broccoli, broken into florets
3 carrots, thinly sliced
3 stalks celery, thinly sliced
Sliced fresh mushrooms to taste (optional)
1 (3/4 oz.) pkg. stir fry seasoning mix, prepared according to package directions
1 (10 oz.) can chicken broth
1/8 tsp. cayenne pepper
Hot cooked rice

In large skillet over medium high heat, stir fry chicken in vegetable oil about 5 minutes or until tender. Stir in onion, green pepper, broccoli, carrots, celery, and mushrooms and fry over medium heat 2-3 minutes. Add prepared seasoning, chicken broth and pepper. Simmer about 2 minutes. Serve over hot rice. Makes 4 servings.
