RON'S PEA SALAD 
2 (16 oz. ea.) bags frozen peas
water
1 medium sweet onion, chopped
6-7 slices bacon, fried and crumbled
1 (8 oz.) block cheddar cheese, cut into cubes
3 hard boiled eggs
1/4 cup (4 tbsp.) mayonnaise
1/4 cup (4 tbsp.) dairy sour cream
salt and pepper, to taste

Fill a 2-quart saucepan about half full with water and bring to a boil. When boiling add peas. Turn off heat and let sit for 3 minutes.

Finely chop one medium onion.

Fry and crumble bacon. I like to cut into small pieces and then fry as it makes for more uniform pieces. Drain grease and cool.

Cut cheddar cheese into 1/4-inch cubes. Boil and chop 3 eggs.

In a bowl, add all ingredients and combine. Add 1/4 cup mayonnaise and 1/4 cup dairy sour cream. Add salt and pepper, to taste. Mix to combine all ingredients.

Cover with Saran or plastic wrap and let set in refrigerator for a few hours for flavors to combine before serving.

I love this recipe! It's simple and delicious. Ron did a great job with it, I only made one small change, which is to add a sprinkling of my favorite cayenne pepper to the mix for an extra kick! The bacon was really good too.
