SWEET SOUR PORK 
1 lb. boneless pork loin or pork steak
3 c. boiling water
1 tbsp. soy sauce
6 tbsp. cornstarch
2 tbsp. flour (oil for deep frying pork)
1 sm. onion, cut into 1" squares
2 green peppers, in 1" squares
1 boiled carrot, cut into slices
1 bamboo shoot, in slices
2 tbsp. oil (for cooking veggies)
1/3 c. catsup
1/2 c. pineapple chunks

SWEET SOUR SAUCE:

2/3 c. sugar
1/3 c. vinegar
2/3 c. water
2 tbsp. cornstarch

Score pork and cut into 1" cubes. Dip pork cubes in boiling water until meat turns color. Drain. Add soy sauce. Mix well. Mix cornstarch and flour in a plastic bag. Put pork cubes in bag, shake until pork cubes are well coated. Deep fry until light brown.

Mix sweet sour sauce ingredients, cook in pan until thickens.

Heat 2 tablespoons oil in pan over medium heat to saute onion, green pepper, carrot and bamboo shoot until done. Add sweet sour sauce, catsup and pineapple chunks. Mix with pork before serving.

If pork is allowed to stand in sweet sour sauce too long before serving, pork cubes will not be crisp.
