SWEET AND SOUR PORK 
1 lb. uncooked pork
1 tbsp. soy sauce
1/2 tsp. salt
Cornstarch (about 1/2 c.)
Cooking oil
1 sm. onion, cut in thin wedges
1 sm. green pepper, cut in chunks
1 c. Sweet Sour Sauce
1 c. drained canned pineapple chunks
2 sm. tomatoes, cut in thin wedges

Combine pork, soy sauce and salt, mix well. Coat pork evenly with cornstarch. Deep fat fry pork in oil heated to 350 degrees until pork is cooked, about 3 minutes. Drain on paper toweling. Keep warm in very low oven. In large fry pan, heat 1 tablespoon oil. Add onion and pepper, cook and stir just until heated. Add Sweet Sour Sauce and pineapple chunks, heat thoroughly.

Carefully stir in pork and tomato wedges. Cook until mixture is heated and coated with sauce. Serve immediately. If desired, pass additional Sweet Sour Sauce. Makes 4 servings. Shrimp or chicken instead of pork - optional.

SWEET SOUR SAUCE:

1 c. sugar
2 tbsp. cornstarch
4 tsp. salt
1 c. red wine vinegar
1/2 c. orange juice
1/2 c. pineapple juice (drained from pineapple chunks)
1 (6 oz.) can tomato paste

Blend sugar, cornstarch and salt. Stir in vinegar, fruit juices and tomato paste. Cook stirring constantly until thickened and glossy. Unused portion can be covered and refrigerated for later use. Makes 3 cups sauce.
