WILD RICE HAM CASSEROLE 
1 pkg. UNCLE BEN'S® long grain & wild rice
1/3 c. onion
1 sm. can whole mushrooms
2 c. ham, cut up in rather lg. pieces
1 can mushroom soup, mixed with 1/2 c. milk
1/2 c. celery, diced
1/3 c. green peppers
1/3 c. chopped pimento
1/3 c. chopped almonds
Salt & pepper to taste

Wash rice thoroughly. Drain well, then pour boiling water over and let stand in a tightly covered container for 15 minutes. Drain and repeat the boiling water process three times, adding about 1 teaspoon of salt to the fourth water.

Meanwhile, saute onions in butter. Add mushrooms and ham. Combine with remaining ingredients and put in buttered casserole. Bake 1 hour at 350 degrees. Top with Parmesan cheese and chopped parsley. Add more mushroom soup if too dry.
