HAM AND RICE CASSEROLE 
2 c. cooked rice
8 oz. Cheddar cheese (shredded)
2 c. ham (cubed)
16 oz. pkg. frozen vegetables of your choice

THICK WHITE SAUCE:

1/4 c. butter
1/4 c. flour
1/4 tsp. salt
1/8 tsp. pepper
1 c. milk

For sauce: Heat butter in saucepan over low heat until melted. Add flour, salt and pepper. Cook over low heat, stirring constantly, until smooth and bubbly. Add milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.

For casserole: In 2 quart baking dish mix together rice, cheese, ham and vegetables. Add white sauce. Mix thoroughly. Bake at 350 degrees for 1 hour. (In microwave, covered, cook on high for 15 minutes.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
