RICE AND HAM SALAD 
1 1/3 c. instant rice
1 1/2 tbsp. dry mustard
1 1/2 tbsp. sugar
1 1/2 tbsp. wine vinegar
1/4 c. oil
1/2 c. chopped bell pepper
1 c. diced cooked ham
1/2 c. cooked peas

Cook rice according to package. Combine mustard, 2 tablespoons cold water, sugar and vinegar. Add oil, beating constantly. Stir lightly into warm rice. Let cool. Add green pepper, ham and peas. Toss lightly. Sprinkle with chopped parsley, if desired.
