HAM AND RICE SALAD 
1 (6 3/4 oz.) canned ham or 2 c. chopped ham
3 c. cooked rice
1 c. sweet relish
4 hard boiled eggs, chopped (save one for garnish)
1/2 c. chopped onion
2 tbsp. chopped pimento
1/3 c. chopped green pepper
1 1/2 c. mayonnaise

Combine all ingredients and toss. Garnish with egg slices. This is best if you chill it overnight. Chill and serve.
