ZITA SPINACH BAKE | |
8 oz. (2/3 pkg) Ziti pasta 1 1/2 tbsp. butter 1 cup mushrooms, sliced 1 green onion, finely chopped 3 cloves garlic, minced 4-5 cups fresh spinach, coarsely chopped 1 tbsp. water 15 oz. ricotta cheese 1/4 cup milk 1 egg 1/2 tsp. nutmeg 1/2 tsp. black pepper 1/2 cup Swiss cheese, grated Preheat oven to 350°F. Cook pasta according to package directions; drain and set aside. In a medium saucepan, sauté mushrooms in butter with green onions and garlic for 3-4 minutes. Add spinach and water. Cover, cook until spinach has wilted, about 3-5 minutes. Stir together ricotta, milk, egg, nutmeg and black pepper in a greased 1 1/2 quart baking dish. Stir in pasta and spinach mixture. Mix. Sprinkle with cheese. Bake in a preheated oven for about 25-30 minutes. Prep Time: 15 Minutes; Bake Time: 25-30 Minutes; Serves: 4-6 |
