SPINACH CHEESE BAKE 
1 tbsp. butter
1 very sm. onion, chopped
3 eggs
1/2 c. milk
1/4 c. flour
1/2 tsp. baking powder
1/2 tsp. salt
Pepper
1 (10 oz.) pkg. frozen spinach, thawed and drained
2 c. Monterey Jack cheese, shredded

Melt butter in 8-inch square or 9-inch round baking dish in microwave. Tilt to coat sides. Add chopped onions, cover, and cook 2-3 minutes until translucent. Set aside.

In medium bowl, beat eggs lightly. Add milk and dry ingredients. Beat until smooth. Stir in cheese and spinach. Bake at 350 degrees for 30-35 minutes or until knife comes out clean. Can be mixed ahead and refrigerated several hours before baking.

Since microwave ovens vary in power, you may need to adjust your cooking time.

this is an awesome recipe... I used it in my culinary class but switched the cheese to Swiss and added 1 tsp. of crushed red pepper... it was such a hit they're adding it to our recipe book.

This recipe is so easy and always a hit as an appetizer. I usually either swap the Monterey Jack cheese for pepper jack or throw in some red pepper for a kick. But, it is excellent just as written!
