BAKED SPINACH CHICKEN | |
4 butterflied chicken breasts 1 cup frozen spinach, thawed and drained 1 cup Parmesan cheese, grated 1/2 cup olive oil 1 1/2 cups Mozzarella cheese, shredded salt and pepper, to taste Preheat oven to 350°F. Drizzle olive oil in bottom of 9x13-inch pan. Place butterflied chicken breasts in pan. Salt and pepper chicken. Sprinkle Parmesan cheese over chicken breasts. Cover chicken with thawed and drained frozen spinach. Drizzle more olive oil over chicken and spinach. Add remaining Parmesan cheese over chicken. Cover chicken and spinach with Mozzarella cheese.
