“LEMON BAKED CHICKEN” IS IN:

LEMON BAKED CHICKEN 
1 frying chicken (2 1/2 - 3 1/2 pounds), cut into pieces
1/4 cup olive or vegetable oil
1/4 cup fresh lemon juice
1/2 teaspoon grated onion
a sprinkling garlic powder
1/2 teaspoon salt
1/4 teaspoon thyme
chopped parsley, paprika

Blend oil, lemon juice, onion, salt, and thyme.

Arrange pieces of chicken in a casserole dish sprayed with non-stick spray. Brush thoroughly with lemon-oil mixture. Sprinkle lightly with garlic powder.

Cover and bake at 350°F until tender, 45 to 60 minutes, basting occasionally with lemon-oil mixture. Uncover casserole during the last 20 minutes to allow chicken to brown.

Garnish with parsley and paprika before serving.
