CROCK-POT PORK CHOP CASSEROLE 
This is one of our family's favorite recipes. I've never seen it posted anywhere, but it's easy to prepare, healthy, very tasty and freezes well.

6-8 bone-in thin cut pork chops
3-4 tbsp. vegetable oil (for browning)

SAUCE:

4 (15 oz. ea.) cans stewed tomatoes (I like Delmonte)
2 large yellow onions, sliced into rings
3 tbsp. thyme
salt and pepper, to taste

Trim fat from chops, if desired. Slice onions into thin rings.

Brown chops lightly on both sides. Set aside.

In large bowl, combine tomatoes, onions, thyme, salt and pepper. Add sauce to cover bottom of Crock-Pot.

Layer chops and sauce, saving enough sauce to cover completely. Cook on low for 8 hours.

Serve alone or over rice or pasta.
