AU GRATIN VEGETABLE CASSEROLE 
2 c. fresh cauliflower
2 c. fresh broccoli
1 can cream of mushroom soup
1/2 c. cheese (Swiss, Colby, cheddar, Parmesan or any mixture)
1 can French fried onions

Separate cauliflower and broccoli into flowerets. Steam until verily done. Drain. Spoon half of vegetables into greased 1 1/2 quart casserole; spoon 1/2 of soup over vegetables; sprinkle with 1/2 the cheese. Layer remaining vegetables, soup and cheese. Top with onions. Bake, covered, at 350 degrees for 15 minutes. Remove cover and bake 10 more minutes until bubbly.

Awesome vegetable dish, made it for the first time & took it to a dinner party. Everyone commented on how good it was. I did not layer it, but instead just mixed the cheese mixture in with the steamed vegetables & the mushroom soup. I used the Weight Watchers Low-Fat Four Cheese Combination of Swiss, mozzarella, asiago & Parmesan. If you are making it for eight or more, you will want to double the recipe. The French's Onion Rings was a great addition & contributed to the yummy flavor of the dish! :)
