PARMESAN CHEESE CREPES 
1/4 cup grated Parmesan cheese
2 eggs
1 1/2 cups milk
1 cup flour
vegetable oil for frying

In a blender or food processor, combine all ingredients and mix until smooth.

In a small frying pan, melt 2 tablespoons of butter on medium heat, swirling to coat bottom of pan. Add enough of the batter to cover bottom of pan.

Cook for about 2 to 3 minutes until brown on one side only.

Fold or roll up and serve as-is immediately.

Variation: Before rolling up, add filling such as cottage cheese or sour-cream dill dressing or Ranch dressing with chopped tomatoes and bacon.
