BLIZZARD COOKIES | |
(These cookies were "invented" by a mother who was confined to her house during a blizzard and "made due" with what was in her cupboard. Much flexibility is allowed here, dependent upon what you have in your cupboard.) 1 c. butter 1/2 tsp. salt 1 tsp. baking soda 1 c. chunky peanut butter 1 c. white sugar 1 c. brown sugar, firmly packed 2 eggs, well beaten 2 c. all-purpose flour 1 (12 oz.) pkg. chocolate chips or butterscotch chips, sunflower chips or whatever Mix first seven ingredients in bowl. Add flour and mix until almost blended. Stir in chips, etc. Cover and chill. Drop batter onto ungreased cookie sheet. Press down tops with the back of a floured spoon. Bake at 325 degrees for 8 minutes or until lightly browned. Remove to a cooling rack. |
