LITE & EASY MARINADE FOR FISH OR
CHICKEN
 
2 c. no fat plain yogurt
Juice of 1 lemon
1 tbsp. Dijon mustard
2 cloves garlic, pressed
2 tsp. each basil, oregano & black pepper

Combine the above ingredients until well blended. Arrange fish or skinless chicken or turkey breasts in a shallow dish. Pour marinade over the meat. Cover and refrigerate at least 2 hours. Remove chicken or fish from dish, eliminating excess marinade. Bake or broil until done. Fish and chicken can also be rolled in Italian style bread crumbs before cooking. Delicious and moist.

I made this recipe tonight with Mahi Mahi...it was DELICIOUS!! I used fat free yogurt, Honey Mustard, garlic, basil and oregano & black pepper.....I let it marinade for approx. 1 hour then baked it at 450 degrees for about 25 minutes.....FABULOUS! I served it with Japanese white sticky rice, sauteed mushrooms and everyone LOVED it!! HooRAY for this recipe!! Thank you!!
